Zucchini, Bacon and Gruyere Quiche or Zucchini Explosion Part lll
Are you tired of zucchini yet? Yes, like everyone else who has a vegetable garden, we've been eating a whole lot of zucchini. When zucchini isn't the star of the meal, we've been eating the obvious side dishes: grilled zucchini, sautéed zucchini, zucchini with tomatoes sprinkled with a little feta cheese and on and on and on....
So the other night when Paul said, "I don't think we have anything in the house for dinner."
I quickly replied, "Are you kidding, we have zucchini!"...... I thought I heard a groan.
I poked my head in the fridge and saw we really didn't have much in the house. There was a small piece of Gruyere, eggs, milk, a little bit of cream, a few strips of bacon, some berries, salad greens, cucumbers, and two bottles of Guinness that have been hiding in the back for several months. I opened my freezer drawer and saw a pie crust from...I don't know when. Looks like we are having quiche. Having a pie crust in the freezer made it a no brainer. Although I would usually prefer to make my own crust, it was a warm humid night and even with the AC on, it wasn't the best of conditions to start messing with pie dough. We were hungry, not picky. It was already 6pm, so I defrosted the frozen dough in the microwave, grabbed the Gruyere, eggs, milk, cream, bacon and a few shallots I found hiding in my onion basket. By 7:15 we were enjoying a piece of silky quiche, green salad and glass of Pinot Noir. Not bad for having nothing in the house!

Zucchini Fritters with Chipotle Cream or Zucchini Explosion Part II
Last year, when I was drowning in zucchini, I tried making zucchini fritters. I wasn't overly impressed with them. I tried my hand at them twice. The second time I added a little grated potato for body. It was a slight improvement, but not blog worthy. I've been thinking about those fritters...and then it came to me. While I was searching for different appetizers from my favorite bloggers, I came across cornmeal cakes on Annie's Eats. Cornmeal, that's it! Cornmeal would be the perfect ingredient to give my fritters enough body without being bland. Annie's recipe inspired me to try again. This time, in my humble opinion, I came up with a blog worthy recipe.

Lazy Afternoon Hummus
Today was one of those lazy days that I just didn't feel like doing anything. The air was warm and summer like. A light breeze blew the wind chimes on the deck, begging me to come out of the house and enjoy this rare April day. At first I felt guilty, having a long list of things I should be doing. But I gave in quickly and enjoyed the quiet of a Sunday afternoon in my own back yard. My yard has come alive again. The grass is green, and the garden is growing. My herbs are growing like crazy and for the first time ever, they all survived the winter. The few cool weather vegetables I've planted have been off to a slow start. The peas are up, as are some of the lettuces, but my radishes and arugula have been the victim of some evil critter. Whatever ate them has good taste. They were heirloom seeds. I hope this is not a foreshadowing of things to come. Anyway, it was too beautiful a day to get aggravated about something over which I had no control....so I decided just to appreciate the moment.
Being lazy can certainly work up an appetite. I decided to whip up a batch of hummus, thinking I could lure Paul outside with some hummus and an ice cold beer. I was right. He's easy prey.

Roasted Eggplant and Vegetable Spread
September is winding down and so is my vegetable garden. This week we said a sad goodbye to our tomato plants. Last year our tomatoes lasted well into October, but I think the volume of rain that has fallen since the end of August just plain did them in. Tomatoes were splitting on the vine even though we were picking like crazy. Paul managed to pick about 4 more pounds of tomatoes before those vines met their fate in the compost heap. I still have some jalapeños growing and will most likely pick and pickle them by next weekend....and yes, the eggplant is still going strong.
We planted 2 Black Beauty eggplant vines this year. At first I wasn't sure they would make it. They were a slow go, but once the summer heated up and the rain fell, those vines have been producing like gangbusters. Right now there are about a dozen eggplants left on the vines and I am running out of eggplant enthusiasm. I have made eggplant Parmesan, eggplant gratin, roasted eggplant, stuffed eggplant, grilled eggplant, ratatouille and given quite a bit of eggplant away. One of my favorite ways to get rid of prepare eggplant is to roast it with some aromatic vegetables and create a delicious and versatile "spread". I put the word "spread" in quotes because you will see, it is much more than a spread.

Drunken Fig Jam
So much to do, so little time. That's how I feel lately. This weekend has been a whirlwind of canning, cooking and baking and feeling somewhat pressured. This pressure was all brought on by myself. I have an obligation (I hate that word) to not waste the gazillion sweet millions tomatoes and bumper crop of eggplant in my garden. I have herbs that need to be dried, frozen or turned into something else. Oh, and prolific jalapenos need pickling, add that to my to do list. Before I get into the eggplant and tomato mess, I found myself running to the market on Friday to pick up a baguette and some garlic. I decided to cruise through the produce section since I was there anyway. I noticed the new crop of early apples creeping in and it suddenly dawned on me, summer is fading away and will soon be just a memory. I walked straight past the peaches and quickly did an about face and decided to pick up just a few more pounds. Then I zoomed in on some Italian prune plums, and thought to myself, isn't there something I wanted to make with those? Oh, I'll pick up just a few pounds of those too. And then there were figs, beautiful plump fresh figs. Now how much longer are these babies going to be around? Yes, I talk to myself mostly because I like my answers. There were so many fig recipes I had planned to try. A few pounds of figs magically jumped into my basket.
I soon returned home with my figs, plums, peaches and yes, my baguette and garlic. They all joined the eggplant, tomatoes, jalapenos, herbs and I forget to mention, the over-ripened bananas that I promised to magically turn into muffins for Paul. Like I said, so much to do, so little time.
It is now Monday morning. My frenzy is over, at least for now. My kitchen is sort of sticky and is crying out for a good cleaning. I have lots of blogging material and tons of pictures to sort through. But this weekend was not all work. We got to go out one night for a nice osso bucco dinner and last night we went to Jones Beach to see Stevie Nicks in concert. (yea Groupon!) Yup, its Labor Day. The unofficial end of summer. Today I may just take the day off, because tomorrow at 8:30AM my quiet summer is over, but that's another story. I won't go there. I don't even want think about it. I do want to tell you about this drunken fig jam.

Mussels in Spicy Wine Sauce
If you like mussels, I guarantee that you will love these! They are simple to make, and pack a lot of flavor. I'm a little crazy about this recipe. They are a fantastic appetizer, double or triple the recipe and they would be an impressive addition to a holiday buffet or, if you are like me, you'll eat them as a main course with a salad and a crispy baguette to sop up the sauce.
I've played with this recipe for quite a while. I've learned a few things that I'd like to share before we start cooking. First, buy the freshest mussels you can find. If fresh local mussels aren't in season, I buy Prince Edward Island mussels from someplace like Whole Foods, where they label the bag of mussels with a harvest date. This recipe calls for a lot of shallots. I've substituted onion when I forgot to buy shallots. I have to say, the flavor that the shallots give the sauce is superior; go for the shallots and only use fresh flat-leaf parsley. If I have fresh homemade tomato sauce or frozen sauce, I use that. If I don't have any homemade sauce on hand, I use a good jarred sauce. You only need a little so I like to use something like "Vincent's Original Sauce". Lastly, use a dry white wine like a pinot grigio. Even a semi- sweet wine will ruin this dish. Oh, and if you are not mollusk savvy, you can refer to my note about clams in this post. The same goes for mussels. Be sure to discard any that do not open during the cooking process as well.

I'm Diggin' Those Baked Clams
This past Wednesday, Paul and I drove down to the beach to meet our friends, Lorraine and Al, for Wine Night at Lola's. We sat outdoors enjoying the warm breeze, feasted on some wonderful food, drank some good wine, shared a bunch of laughs and, overall, experienced a truly pleasant, relaxing, midweek summer evening. After dinner, we walked back to Lorraine's place where Al opened a cooler filled with clams sitting atop ice, waiting to be transformed. They sent us home with a bagful of those beauties. I knew what I would be doing Thursday night.
After some deliberation I decided to make some baked stuffed clams and a pot of my mother's Manhattan clam chowder. Did it matter that it was 86 humid degrees outside and we had 4, count 'em, 4 air conditioners running? Not at all....some things are worth wasting energy over....Did I just say that?

A Tale of Two Bruschettas
What do you do when you have a bunch of tomatoes that ripen all at once? ...
......And you hear the little gnomes in your herb garden calling ..."pinch these herbs...NOW!"
